Wonderful overview and review of the show! I haven't watched it yet but look forward to it. Your nitpicks is how I nitpicked The Last of Us in some aspects. I absolutely understand how your mind works. TLOU is like a baby to me too, and some things were weird and nonsensical in the show. But I'm glad to see more good game adaptations lately (well, minus The Witcher like you said...).
Still haven't finished the show, but I just finished episode three which includes the line "Yeah, well, the wasteland's got its own golden rule; Thou shalt get sidetracked by bullshit every goddamn time." and if that isn't a perfect example of Fallout gameplay then I don't know what is.
I absolutely loved the show. I didn't have high expectations (or any expectations, really) after so many failed miserably, but I think I like the Fallout show even more than The Last of Us and I must admit - it was unexpectedly good. I loved the performance of both Ella Purnell and Walton Goggins, they nailed the vibe perfectly and I'm glad that the producers were not taking the show too seriously and explain in a "realistic" way how video games elements like the stimpacks are actually working. It was fun, aesthetic and I'm in for more. I never finished a Fallout game and this show can't make me do it, but I always loved the lore. For me - most probably, it was even better because of this.
I think it's such a great Fallout Gateway Drug - people with little knowledge of the series can appreciate it tons and that's just awesome. We love to see it!
Goggins should be the big sell - he's awesome. As long as you like wacky end of world stuff, I think you'll dig it. I think is aimed at folks who are unfamiliar with the series

They gave Goggins the best lines!

I never really played any of the Fallout games. I think I tried the first one but never got into it. But, if the show has Walton Goggins, I'm in.
